Minted Lamb Burgers

Ingredients
2 tablespoons olive oil, plus extra for frying
1 tablespoons lemon juice
500g lamb mince
1 cup mint leaves, finely chopped
4 tablespoons olive paste (or tapenade)
Salt and pepper

Instructions
Combine all the ingredients and mix well (or place in food processor to mix).
Form small burgers and fry in a pan, grill or barbecue.

Serve with Pita bread, feta cheese and sliced tomato. A Greek salad is also a great accompaniment.
