Roast Veal with Apple Ginger Sauce

Ingredients
1kg boneless veal roast (ask your butcher)
2 teaspoons olive oil
1 cup orange juice
¼ cup apple, grated
¼ cup raisins
1 teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg

Instructions
Heat oven to 325°F (162°C).
Heat oil in frying pan and brown all sides of roast.
Place roast, fat side up, in roasting pan and pour orange juice over top.
Make a paste of the rest of the ingredients and press on the top of roast.
Bake uncovered for 1 hour - 1 1/4 hours.
Let stand for 15 minutes and slice thinly.

To make a change from baked vegetables, this dish can be served with rice and garnished with slices of orange, apple or other seasonal fruit.
