Grilled or Barbecued Quail Simple to prepare and very tasty. Serves 4. Ingredients 2-3 quail per person
2 tablespoons oil (preferably light olive)
1-2 cloves garlic, mashed
½ teaspoon coarse salt
½ teaspoon thyme
Instructions Mash the oil, pepper, garlic, and thyme together with a mortar and pestle.
Rub the mixture over the quail inside and out.
Set the birds on the grill or barbecue.
Grill or barbecue for 5 minutes on each side.
Serve with boiled new potatoes and salad.
