Coffee-and-Pepper-Crusted New York Steaks In this unusual recipe, the piquancy of peppercorns meets the mellowness of coffee beans with stellar results. Serves 4. Ingredients 4 New York steaks, each about 400g and 2-3cm thick (ask your butcher)
2 tablespoons whole coffee beans
2 tablespoons whole black peppercorns
Oil for brushing or spraying steaks (preferably light olive oil)
Salt
Instructions Coarsely grind the coffee beans and peppercorns in a food processor or coffee grinder.
Press the mixture evenly on both sides of the steaks.
Brush or spray steaks lightly with oil then grill or barbecue the steaks over direct high heat for 8 to 10 minutes, turning once halfway through grilling time.
It's best not to turn the steaks until you see beads of juice on the surface.
Remove the steaks from the grill and season both sides with salt.
