Rabbit Hash Ingredients 1 1/2 – 2 cups chopped cooked rabbit
1/3 cup bacon drippings or shortening
3 medium baking potatoes
3 medium onions
½ teaspoon celery salt
¼ teaspoon salt
Freshly ground black pepper
Instructions Remove meat from rabbit bones, and cut into small pieces with kitchen scissors or knife.
Bring potatoes to boil and then grate coarsely.
Put bacon drippings into pan and heat.
Add grated potatoes.
Grate onions and add to potatoes.
Add rabbit and seasoning.
Cover and cook on medium heat until potatoes are browned on under side.
Stir to blend, turn over, cover again, and brown on under side.
Cooking requires about 20 minutes.
