Veal Scallopini

Ingredients
8 veal scallopini (ask your butcher to pound the meat until thin)
flour, seasoned with paprika, salt and pepper
4 tablespoons butter
250g thinly sliced mushrooms
½ garlic clove, crushed
1 cup beef stock
½ cup tomato sauce
½ cup capsicum, chopped
125g fettuccini
Parmesan cheese

Instructions
Preheat oven to 170 degrees.
Cover veal in seasoned flour.
Heat butter in a frying pan and brown veal .
Place veal in baking dish with a lid and add remaining ingredients, except capsicum, fettuccini and cheese .
Cover and bake 30 minutes.
Add capsicum and bake for a further 15 minutes, uncovered .
While meat bakes, cook fettuccini and drain.
Transfer fettuccini to heated serving platter, arranging veal on top of fettuccini.
Drizzle sauce from baking dish over meat and sprinkle with Parmesan cheese.
