Lean Lemon Mustard Pork Steak



Preparation time: 5 minutes
Cooking time: 4-5 minutes + 20 minutes OR up to 4 hours marinating

Ingredients
4 lean pork rump or leg steaks, thick cut
juice and rind of 1 lemon
1 tablespoon oil (preferably light olive)
1 tablespoon Dijon mustard or wholegrain mustard
salt and pepper as desired
apple sauce to serve

Instructions
Pre-heat frying pan, BBQ or grill for two minutes on medium.
Combine lemon juice and rind, olive oil, mustard and seasoning in a glass bowl and mix well.
Coat the steaks with marinade on both sides.
Panfry, barbecue or grill Pork steaks for 2-3 minutes each side (or until cooked the way you like it).
Serve hot with apple sauce, and salad or steamed vegetables.

Don’t overdo the cooking. Nowadays we know it’s OK to cook Pork on medium for just a few minutes each side.
