Pork, Rocket and Grapes with Orange Dressing – Salad Ingredients 500g lean pork strips
4 rashers lean bacon, cut into strips
1 tablespoon oil
1 large bunch salad rocket
1 bunch English spinach
1/3 cup orange juice
1 teaspoon orange rind, grated
2 tablespoons walnut oil
1/3 cup pecan or walnuts, chopped
500g grapes, halved
Instructions Heat oil in hot pan, quickly brown pork in two batches for about 2-3 minutes, remove.
Cook bacon for 2 minutes, remove.
Add to the pan orange juice, orange rind and oil, stir well.
Combine in a bowl washed and dried rocket and spinach leaves, pork, bacon, pecans and grapes.
Pour over warm dressing, toss well and serve.
