Thai Beef and Bean Stirfry



This simple Thai dish is very quick and easy to prepare. Serves 4.

Ingredients
500g topside or round steak cut into thin strips
2 teaspoons vegetable oil
2 cloves garlic, crushed
185 g snake (yard-long) or green beans, cut into 10cm lengths
2 kaffir lime leaves, shredded – OR a small amount of finely grated lime rind
2 teaspoons brown sugar
2 tablespoons light soy sauce
1 tablespoon Thai fish sauce (nam pla)
2 tablespoons coriander leaves

Instructions
Heat oil and garlic together in a wok over a medium heat, increase heat to high, add beef and stir-fry for 3 minutes or until beef changes colour.
Add beans, lime leaves, sugar and soy and fish sauces and stir-fry for 2 minutes or until beans change colour.
Stir in coriander and serve immediately with rice.
