Beef with Red Pepper Butter This is a fabulous meal for two. Serve with mixed vegetables - squash or snow peas, for example, and roast potatoes Ingredients 500 gm eye fillet of beef
30 gm butter
RED PEPPER BUTTER
125 gm butter, softened
1 tablespoon finely chopped red pepper/capsicum
2 tablespoons grated fresh parmesan cheese
Instructions Make Red Pepper Butter in advance.
Place butter, red pepper and parmesan cheese in bowl.
Beat to combine.
Shape butter into a log, wrap in plastic food wrap. Chill.
Melt plain butter in a frying pan over a high heat.
Add beef and sear until brown on all sides.
Transfer to an ovenproof dish and bake for 35 mins at 180C, or until cooked to your liking.
To serve, slice beef and top with a slice of Red Pepper Butter.
