Porcupine Meatballs Different meat may be used. Other condensed soups can be used. This all adds different flavours. Serve with fluffy mashed potatoes and green peas. Delicious and kids love it. Ingredients 500g minced beef or pork
1 large onion chopped
1 green capsicum or green pepper chopped
1/2 cup uncooked rice
1/2 cup dry breadcrumbs or rolled oats
1 whole egg
salt & pepper
sprinkle of sugar
1 teaspoon paprika
1 tin of tomatoes or 1 tin of condensed tomato soup
1 can of hot water Instructions Mix meat with onion, capsicum, uncooked rice, breadcrumbs or rolled oats, egg, salt & pepper, paprika, and a sprinkle of sugar.
Wet your hands and form into meatballs.
Bring to the boil the tomatoes or tomato soup with the can of hot water. Turn to a simmer and add meatballs.
Cover and simmer for about 30 minutes or until meatballs with rice is cooked. A little more water may need to be added during cooking to stop burning. Compliments of your friendly Independent Butcher shop |
